Steel Cut Oats are groats cut with rotating steel blades. During this process, each groat is cut into small pieces, resulting in oatmeal. Traditional steel cut oats take 30 to 45 minutes to cook on the stove top only. Steel cut oats are not microwavable and may take more than one day of soaking to prepare as overnight oats. Also, they cannot be used in baking.

Rolled Oats are literally rolled flat. They are cut like steel cut oats, steamed, placed between two large rollers and pressed into the familiar round, flat shape. Rolled oats cook on the stovetop or microwave in less than 5 minutes, but lose their nutty texture. Overnight oats prepared with rolled oats have a raw flavor and get pasty quickly. Traditional rolled oats are good for baking.
