Ingredients
- 1 cup packed brown sugar
 - 1/2 cup sugar
 - 3/4 cup butter
 - 2 eggs
 - 2 tsp. vanilla
 - 1 tsp. baking powder
 - 1/4 tsp. baking soda
 - 1 3/4 cup all purpose flour
 - 1/4 tsp. salt
 - 2 tsp. ground cinnamon
 - 2 cups Coach's Oats
 - 1 cup raisins*
 
Instructions
- Preheat oven to 375.
 - In a mixing bowl, cream together the sugars and butter.
 - Mix in the eggs and vanilla.
 - Add combined baking powder, baking soda, flour, salt and cinnamon. Mix well.
 - Stir in oats and raisins*.
 - Drop by rounded teaspoons onto an ungreased cookie sheet.
 - Bake for 8 - 12 minutes or until edges are golden.
 - Cool cookies on wire rack. Makes about 4 dozen cookies.
 - *Options - Replace raisins with chocolate or butterscotch chips. May also add 1/2 cup chopped walnuts or pecans.
