Ingredients
- ½ cup Coach’s Oats®
- 1 cup flour
- ½ cup (1 stick) unsalted butter
- ¼ cup brown sugar
- ¼ tsp. salt
- 4 eggs, plus 2 egg yolks
- 2 cups sugar
- 1/3 cup flour
- 1 tsp. lemon zest
- 1 cup freshly squeezed lemon juice
Instructions
- Preheat oven to 350°.
- Cut butter into oats, 1 cup flour, brown sugar and salt.
- Press crust firmly into a well greased 9 x 13 –inch baking dish. Bake for 20 minutes.
- While crust is baking, mix eggs, yolks, sugar, remaining flour.
- Once combined, add lemon zest and juice to eggs and sugar mixture.
- Pour lemon mixture over crust and reduce heat to 300°.
- Bake for 30 minutes.
- Let bars cool and store in refrigerator.
- Garnish with powdered sugar before serving.
