Ingredients
- 1 ripe banana, mashed
- 1/4 cup olive oil
- 1/4 cup maple syrup
- 2 eggs
- 1 cup Coach’s Oats®
- 1/4 cup whole wheat flour
- 1 tsp cinnamon
- 1/4 tsp baking soda
- 1 cup chocolate chips
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, mix banana, olive oil, maple syrup and eggs.
- In a separate bowl, mix Coach’s Oats®, flour, cinnamon, salt and baking soda.
- Add dry ingredients to wet ingredients and combine.
- Stir in chocolate chips.
- Spoon mixture into greased or lined muffin tin.
- Bake for 18 to 20 minutes or until lightly golden.
- Cool on wire rack and serve.
